Oatmeal is one of those rare foods that's at home in both categories, Healthy & Affordable. For less then 15 cents a serving you can start out your day with a nutritious breakfast and have almost as much money as when you got up. Think about it, what other breakfast choice can say that?

And Oatmeal is not just for breakfast. You can mix it with other ingredients to make bread, cookies, salad, soap and beer to name a few of its versatile uses.

Sunshine on My Oatmeal 

Oatmeal lends itself to whatever you imagination can come up with. You can add sugar, honey or molasses to give it a distinctive flavor. Some people eat it like rice with salt an pepper and a dab of butter.

As you can see from the picture I took below I like to go the fresh or frozen fruit route. I slice Strawberries or Bananas straight into the hot Oatmeal, topped off with a little skim milk and I'm good for hours. If I'm in the mood for something out of season I'll take a handful of frozen Blueberries or Raspberries and let them thaw a bit before I cook the Oatmeal.

warm oatmeal cookies with raisins, how good is that.


1 cup firmly packed brown sugar
1 egg
1/2 cup vegetable oil, preferably canola
1/2 cup unsweetened applesauce
1 teaspoon vanilla
3/4 cup whole-wheat flour
1/2 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups Quaker oats (quick or old fashioned, uncooked)
1 cup "mix-ins" (dried cranberries, mixed dried fruit pieces, raisins, mini chocolate chips or chopped nuts)

1. Heat oven to 350ºF. In large bowl, beat brown sugar, egg, oil, applesauce and vanilla on medium speed of electric mixer until combined. Add combined flours, baking soda and salt; beat on low speed just until blended. Stir in oats and "mix-ins."
2. Drop dough by level measuring tablespoonfuls about 2 inches apart onto ungreased cookie sheets.
3. Bake 9 to 10 minutes, until light brown. (Do not overbake. Centers will appear soft.) Cool 1 to 2 minutes on cookie sheets; transfer to wire racks. Cool completely. Store tightly covered.

Meatloaf With Oatmeal 

oatmeal makes for a dryer and nutty tasting meatloaf

Ingredients
1-1/2 pounds lean ground beef or turkey
3/4 cup rolled oats
3/4 cup finely chopped onion(try red onion)
1/2 cup catchup
1 egg, lightly beaten
1 tablespoon Worcestershire sauce or soy sauce
2 cloves garlic, minced ( try extra garlic )
1/2 teaspoon salt
1/4 teaspoon black pepper

Extra ingredients to try, chopped green peppers, chopped jalapeno peppers,crushed tomato instead of catchup, thawed frozen veggies. Be creative and you family will thank you.

mix all ingredients together and put in a loaf pan. Cook in a preheated oven at 350 degrees for around 55 minutes. Use meat thermometer to ensure correct level of done.
