And Oatmeal is not just for breakfast. You can mix it with other ingredients to make bread, cookies, salad, soap and beer to name a few of its versatile uses.
At least 5 days a week I have a serving of oatmeal mixed with 3/4 cups of wild blueberries, topped with a little skim milk. This wonderfully healthy and delicious Oatmeal and fruit breakfast costs less then 1.20 per serving, with the wild blueberries from Maine adding most of the cost.
Sunshine on My Oatmeal
As you can see from the picture I took below I like to go the fresh or frozen fruit route. I slice Strawberries or Bananas straight into the hot Oatmeal, topped off with a little skim milk and I'm good for hours. If I'm in the mood for something out of season I'll take a handful of frozen Blueberries or Raspberries and let them thaw a bit before I cook the Oatmeal.

warm oatmeal cookies with raisins, how good is that.

1 cup firmly packed brown sugar
1 egg
1/2 cup vegetable oil, preferably canola
1/2 cup unsweetened applesauce
1 teaspoon vanilla
3/4 cup whole-wheat flour
1/2 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups Quaker oats (quick or old fashioned, uncooked)
1 cup "mix-ins" (dried cranberries, mixed dried fruit pieces, raisins, mini chocolate chips or chopped nuts)
1. Heat oven to 350ºF. In large bowl, beat brown sugar, egg, oil, applesauce and vanilla on medium speed of electric mixer until combined. Add combined flours, baking soda and salt; beat on low speed just until blended. Stir in oats and "mix-ins."
2. Drop dough by level measuring tablespoonfuls about 2 inches apart onto ungreased cookie sheets.
3. Bake 9 to 10 minutes, until light brown. (Do not overbake. Centers will appear soft.) Cool 1 to 2 minutes on cookie sheets; transfer to wire racks. Cool completely. Store tightly covered.

Meatloaf With Oatmeal
oatmeal makes for a dryer and nutty tasting meatloaf
1-1/2 pounds lean ground beef or turkey
3/4 cup rolled oats
3/4 cup finely chopped onion(try red onion)
1/2 cup catchup
1 egg, lightly beaten
1 tablespoon Worcestershire sauce or soy sauce
2 cloves garlic, minced ( try extra garlic )
1/2 teaspoon salt
1/4 teaspoon black pepper
Extra ingredients to try, chopped green peppers, chopped jalapeno peppers,crushed tomato instead of catchup, thawed frozen veggies. Be creative and you family will thank you.
mix all ingredients together and put in a loaf pan. Cook in a preheated oven at 350 degrees for around 55 minutes. Use meat thermometer to ensure correct level of done.

- You gotta get your oats on! I'm not a fancy oat eater, just butter, sugar, and salt for me please. I have to admit though, the guy cooking oatmeal in a coffee maker has got it going on.

- I usually eat it with butter and brown sugar, but butter and maple syrup (real, please), is good too.... My partner uses butter and salt.

- My family now enjoys steel cut oats. I mix a 1 to 4 ratio of oats and water in my pressure cooker before I go to bed. I heat just until the cooker reaches pressure then I remove from the heat and leave it sealed until the morning. It is cooked to perfection in the morning. I just heat on medium low to serving temperature.
Sometimes I replace up to 1/4 the oats with another whole grain, wheat, rye, barley, etc. or add chopped apples, cinnamon and nutmeg for apple pie oatmeal!

- Well, I have a recipe for oatmeal that is the best in the world. People make faces when I tell them, but when they taste it, it is a different story.
I will share it with you. It is tasty and exceptionally healthy.
Oatmeal Omelet
Boil 2 cups of water. When it comes to a full boil add 1 cup of oatmeal, quickly follow with the whites of 2 or 3 eggs. Finish cooking following the recipe on the box. When it has set for a minute, put in bowl, add mild picante sauce to taste and a table spoon of flax seed oil. Stir well and eat.
I see that face! But believe me, its delicious! Try it, you'll like it!
I have to admit, however, I don't get the instant stuff. I'd rather go without!
